Inventory turnover

A ratio comparing usage cost with average inventory value over the same period. It describes how much stock value moves through the operation.

Definition in practice

Opening-and-closing averages can conceal large stock swings. A delivery just before the closing count can increase the denominator even if the rest of the period ran lean. More frequent observations can produce a more representative average when that timing effect matters to an operating decision.

Formula and worked example

Turnover = usage cost ÷ average inventory value.

Assume period usage is $12,000 and opening and closing inventories are $3,000 and $5,000. The simple average inventory is $4,000, so turnover is 3 times in that period. It is not an annual rate unless the usage period is a year. The inputs are worked assumptions, not a target.

Use it in the kitchen

Do not pursue a high ratio without checking service outcomes. Low stock can reduce cash tied up in storage while increasing emergency deliveries or unavailable menu items. Compare the ratio with delivery cadence, shelf life, purchase discounts and observed waste. Keep the inventory valuation basis consistent with the usage-cost basis.

Boundary check

A period-end stock value should include the relevant storage locations and prepared stock consistently. Missing a location lowers the average inventory denominator and can make turnover look faster without any genuine change in purchasing or consumption.

Keep the input record

Write the unit, period and preparation beside the figure you use. Keep the original receipt, count or recipe record available so another person can reproduce the calculation. A clearly labeled assumption is useful for planning; it should not later be mistaken for a measured result.

Use the linked calculator to test your own inputs, then check the result against the original record. The browser ledger can hold recipe quantities and purchase prices, while your stock and accounting records provide the wider operating context. Export a backup before replacing a working ledger.
